I’ve totally revamped my original Baked Oatmeal recipe to make it healthier. It’s just as delicious with a crispy top and custardy filling, but this time it has less than half the butter, half the sugar, and more fruit!
Time: 15 minutes prep, 30-35 minutes in the oven
3 cups of plain oats (not instant-oats, or steel cut, those won’t work)
1/2 cup packed brown sugar
1 tsp cinnamon
2 tsp baking powder
100g butter (3.5oz) melted
2 cups milk
2 tsp vanilla
1 cup blueberries (if they’re frozen, defrost them first)
2 ripe bananas, diced into small chunks
1. Preheat oven to 190C (375˚F).
2. Put all the ingredients except the fruit into a mixing bowl and stir together until it’s mixed.
3. Add the fruit and gently stir it in. It will look VERY soupy. This is fine, the oats will soak up the liquid.
4. Grease a 13×9 pan or baking dish. Pour the mixture into the pan and bake for 30 minutes or until browned on the top, and if feels firm to the touch. If you’re using a smaller pan that’s square and deep, it can take up to 45 minutes.
