I’ve been on a chocolate chip kick here, obviously, so here’s a dead easy recipe for delicious oat bars. When I say easy, I mean 4 steps easy. They’re great for a mid-day snack, and offer a (slightly) healthier alternative to brownies!

Time: 35 minutes total
Yield: 16 slices
2 1/2 cups rolled oats
3/4 cup shredded coconut
1 cup chocolate chips (dark or milk chocolate)
2/3 cup firmly-packed brown sugar
2/3 cup plain flour
1/2 teaspoon baking powder
1/2 cup light olive oil (it does make a difference)
1/3 cup milk
1/2 teaspoon vanilla
a sprinkle of cinnamon (optional)
1. Preheat your oven to 350F (180C) and line a baking dish with grease proof or parchment paper. (I’d suggest a pan that’s about 18cm x 28cm (roughly 8x12in) as the original recipe suggests. You can make them thicker or thinner, but you’ll have to adjust the baking time accordingly.)
2. In a large bowl, combine the oats, coconut, brown sugar, chocolate chips, and cinnamon (if you want cinnamon). Mix it all together and then add the flour and baking soda. Stir it all together so it’s coated.
3. In a small bowl, whisk the oil, egg, vanilla, and milk together. Pour it over the oat mixture and stir it well until it’s thoroughly combined. (The mixture will look messy, but I swear it’ll work fine!)
4. Pour the mixture into the lined pan, and press it in with a spatula until it’s flat and even. Bake for 20 minutes, or until it’s a light gold color and seems to be set.
